Grilled banana oatmeal

After 5 years of experience in the kitchen (I could say I'm a senior meal developer), I got to a level where I can invent my own recipes. So I proudly present you one of my patents.

It's a simple oatmeal recipe with nut butter of your choice and grilled banana. For grilling I use coconut oil and a pinch of coconut sugar. The result is a creamy, comforting breakfast, done in 5 minutes. Pairs perfectly with a big cup of coffee.

When I moved to Paris, I discovered nut butters. In organic food shops there are a plethora of versions. My favourite are blanched almond and cashew butter. The most exotic one I tried is pistachio butter and I use it in Marrakesh salad you can find also on my blog.

Ingredients

oats, vegan milk, coconut sugar (or other sweetener), coconut oil, banana, nut butter, vanilla extract

Algorithm

Measure 0.75 of a cup of oats and put them in a cooking pot. Add 1.25 cup of milk, 0.5 spoon of coconut sugar and a bit of vanilla extract. Cook on medium heat, stirring occasionally, for 3-5 minutes, until the porridge has a nice not-too-thick consistency, and transfer it to a plate or a small bowl. In the meantime melt 0.75 teaspoon of coconut oil and add banana cut in "wheels". Sprinke with 0.3 teaspoon of coconut sugar and stir. Grill 1 minute on one side, turn the "wheels" and grill 1 minute on the other side. Meanwhile put a large spoon of your nut butter of choice on the oats and top with grilled bananas. Bon app├ętit !
