White asparagus risotto

Asparagus is a great source of vitamin K, folate and fiber and contains only 20 calories per 100 grams. That's why I didn't hesitate when I saw a pretty "bouquet" of white asparagus on sale in Naturalia. I decided to make a risotto. I didn't follow any recipe, just used my knowledge of cooking and intuition, and it turned out yummy!


risotto rice, onion, garlic, olive oil, salt, pepper, white asparagus, white wine, fresh goat cheese (chèvre ou brebis frais), vegetable stock cube, parmesan, lemon


Put a casserole on medium heat and add olive oil. When it gets warm, add chopped onion and garlic and sauté until soft. Then, add chopped white asparagus. Cover and cook for 10 minutes, stirring occasionally. Add some white wine and rice and cook for a few minutes until the liquid evaporates. Add water, a small chunk of vegetable stock cube, salt and freshly ground pepper. Cover with lid, cook and stir from time to time until the rice is cooked (ideally you measure the right amount of water so all water is absorbed in the end). Then, add some fresh goat cheese, lemon juice and lemon peel. Serve topped with parmesan.
